Why we roast it

Named for the moment supply gets cut in half and value goes the other way. This Sumatran Mandheling is wild and low-toned by nature — we lean into it with a deliberate dark roast that pulls out cedar, dark cocoa and a brown-sugar sweetness most darks lose. Almost no acidity, enormous body. A small pour goes a very long way.
